For these special oils, the flavour is part of the milling process - never added later. Fresh olives are milled together with whole fruit at harvest - whether citrus, herbs or a range of other natural ingredients, allowing the character to form naturally before extraction. Nothing is infused, nothing added later. In Italy these oils are called 'agrumato' - from the word agrumi, which means citrus.

The result is extra virgin olive oils that have unique gustatory and aromatic properties, which of course can enhance different dishes by adding a dash of dazzling flavour.
