From the producers:
"Olea Prilis is a tribute to the Etruscan people, the first to cherish the Tuscan Maremma, a wild Mediterranean coastline where a salty lake once existed, known to the ancient Romans as "Lacus Prilis." Over the centuries, the lakebed has dried and is now home to our olive trees. By naming them "OLEA PRILIS," we pay homage to the region's fascinating history.
HEALTH BENEFITS
Olea Prilis boasts a high natural polyphenol content. These bio-active molecules contribute to protecting blood lipids from oxidative stress. The beneficial effect is achieved with a daily intake of 20g of extra virgin olive oil containing at least 5 mg of hydroxytyrosol and its derivatives. Health claim approved by EFSA for olive oil polyphenols (Commission Regulation (EU) 432/2012 and Regulation EC 1924/2006).

A luscious golden oil very smooth to the tongue with a vibrant after taste of fresh green olives. I found it gave great depth and character to my cold tomato soup which was invented to help get rid of an autumn abundance of tomatoes. A Kiwi spin on gazpacho.
Six tomatoes processed to liquid, half a teaspoon of salt, three dessertspoons of this tasty oil and two of basalmic vinegar, two slices of Vogels. Add herbs if you like and even a touch of chili. Process it hard again then mellow with Greek yoghurt to your taste. Lunch for two. And think of all the polyphenols in the tomatoes and the oil. I think it would add depth to just about any dish.
Loved this product,it has a nice peppery burn
